    Mango Chutney

    Ingredients

    • 2 1/2 cups peeled, seeded and chopped mangoes (4 or 5)
    • 1 cup plus 2 Tbsp firmly packed brown sugar
    • 1 cup cider vinegar
    • 3/4 cup raisins
    • 1/2 lemon (medium), seeded and chopped
    • 2 Tbsp chopped fresh ginger
    • 2 small garlic cloves, finely chopped
    • 3/4 teaspoon salt
    • 1/8 teaspoon ground red pepper

    Instructions

    Combine all ingredients in heavy medium saucepan and bring to simmer over medium heat. Reduce heat to low and simmer uncovered until thick, about an hour. Refrigerate in covered container until ready for use. Can be kept in refrigerator for several weeks or may put in sterile jars and processed in hot water bath.
