Pickled Beets
Ingredients
- small beets
- 3 C vinegar 5% white
- 2 C water
- 2 1/2 C sugar
- 2 Tsp allspice
- cinnamon Stick 3"
- 1/2 teaspoon whole cloves
- 1 Tsp salt
Instructions
25 2" - 3" beets makes 5 1/2 quarts. Depending upon the size of your beets, you may need more syrup. I usually 1 1/2 the above recipe just to be sure! Cook beets until tender. Slip skins and slice 1/4". Combine vinegar, water, sugar, spices, salt. bring above to a boil, simmer 15 minutes. Add the beets to the syrup and simmer 5 min longer. Pack beets into hot jars. Bring back to boil and pour over beets. Seal immediately in boiling water bath. Makes about 4 quarts
