Pickled Peaches

Ingredients

  • 3 pounds sugar
  • 2 cups vinegar
  • 2 tsps whole mace
  • 1 tsp whole allspice
  • 1 cinnamon stick, 3-inch
  • 1 tsp whole cloves
  • 6 pounds peaches

Instructions

Combine sugar, vinegar, and spices (tied in a bag) and bring to boiling point. Scald peaches. Peel and then drop a few at a time into the syrup. Cook gently just until tender. Take out and pack in jars. When all the peaches are cooked, boil down the syrup until thick. Pour over the fruit and seal. (1-1/2 pints.)
