These refrigerator dill pickles are so easy to make that you'll wonder why you didn't try them sooner. You probably have a lot of the ingredients already at home, and all you have to do is blend them together and let good things happen. As kids, it always seemed like magic that cucumbers could be transformed into crunchy, sweet-and-sour pickles. As adults... well, it still seems pretty magical!

Ingredients
- 10 pickling cucumbers, washed
- 4 cup water
- 2 cup white vinegar
- 2 tablespoon kosher salt
- 1 teaspoon sugar
- big bunch of fresh dill
- 1 head garlic, skins removed, cloves smashed (less if it is strong garlic)
- 10 peppercorns

Editor's Note: Choose your cucumbers wisely! Look for ones that are uniform in size and are crunchy and firm, but not underripe. The farmers' market is a great place to buy cucumbers for pickling, because they won't have a wax coating, which cucumbers from the grocery store sometimes have.

Make the brine. Add the water, vinegar, salt, and sugar to a medium sauce pan and bring it to a boil. Give it a stir to make sure that the sugar and salt dissolve. Remove it from the heat and let it come to room temperature.

Slice cucumbers into 1/4 inch slices and place in glass jars. Do not pack super tightly, we will need room for the brine! Top with the fresh dill, smashed garlic, and peppercorns.

Add enough brine to cover the cucumbers, herbs, and spices. Seal with an airtight lid and refrigerate for at least one week to let the flavors develop.
How long will refrigerator pickles keep? These will stay fresh in the fridge for 4-6 weeks!
