Skid row Mustard
Ingredients
- 7 tbsp. (2 oz.) dry mustard
- 2 tbsp. (1 oz.) mustard seed
- 1/4 c. unbleached white flour
- 1 tbsp. sugar
- 1 teaspoon salt
- 1/4 teaspoon celery seed
- 1/8 teaspoon nutmeg
- 1/4 c. water
- 1 c. cider or red wine vinegar
- 1 teaspoon molasses
- 2-4 tbsp. white wine
Instructions
Mix dry ingredients in 2 cup glass measure. Stir in water, then vinegar. Add molasses. Cook for 3 minutes on Normal or High, stirring frequently. Set control to Defrost and cook 4 minutes, stirring after 2 minutes. Stir in white wine until mustard is of the desired consistency. Store in a covered container in the refrigerator. Makes 1 3/4 cups - 12 ounces.
