Spiced Plums

Ingredients

  • 3 1/2 lbs. prune plums
  • 6 cups granulated sugar
  • 1 tbsp ground cinnamon
  • 1 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 1 1/2 cup vinegar (white)

Instructions

Remove stones, and chop up plums (leaving no large pieces of skin when done). put in Large pot. Add remaining ingredients and stir on med-high stove until all the sugar dissolves. bring to a boil, stirring occasionally until plums are mushy. Cool. Run through a food processor a bit at a time, return to pot and bring to a boil. Pour into hot sterilized jars to within 1/4 inch of top. Process. (Makes 5 1/2 pints)
