Starfruit Jam
Ingredients
- The fruit must be properly ripe. Cut off and discard the sharp
- edges of the fruit. Cut into slices about three quarters of an inch
- thick. For two and a half pounds of fruit add one and a half pints
- of water. Boil until tender, about 15 minutes. Add 1 1/2 pounds of
- sugar (suggest 1 pound then test for sweetness). Add juice of 2
- lemons and a teaspoon of salt. Boil until jam jells. Test at 15
- minutes.

Note: The small seeds are considered to improve the flavour.
