Sweet Onion Relish

Ingredients

  • 5 lbs. sweet onions, chopped
  • 1 cup sugar
  • 2 1/4 cups white vinegar (5% acidity)
  • 2 tablespoons salt
  • 2 tablespoons celery seeds

Instructions

Combine all ingredients in a Dutch oven; bring to a boil over medium heat. Reduce heat, and simmer 20 minutes, stirring occasionally. Spoon relish into hot jars, filling to 1/2" from top. Remove air bubbles; wipe jar rims. Cover at once with metal lids, and screw on bands. Process in boiling-water bath 10 minutes. Let stand 1 week before serving. Store in refrigerator after opening. Makes 5 pints.
