Tomato Conserve

Ingredients

  • 3 pound tomatoes
  • 1 pound sugar
  • 1 lemon
  • 1/4 ounce ginger root or preserved ginger

Instructions

Cook tomatoes 3/4 hour. The add sugar, thinly sliced lemon and finely cut ginger root (which has been previously boiled in fresh water for 10 mintues). Cook until thick and smooth then pour into sterilzed Kerr jars and seal. If preserved ginger is used just slice and add to conserve while cooking. I would BWB for 5 minutes to ensure good seal.
