Watermelon Preserves
Ingredients
- Cut all red meat from rinds, then peel all outer skin from rind.
- Cut rind into small cubes and soak in lime water overnight. Next
- morning, thoroughly wash lime water out. Cover rinds with water
- and cook for 15 minutes. Drain and wash thoroughly again. Chill
- rinds with ice cubes; weigh rinds and mix pound for pound with
- sugar (equal weights of rinds and sugar). Add 2 sliced lemons and
- sufficient water to cook slowly for about 3 hours or until rinds
- become clear. Seal in sterilized jars.
