Zesty Salsa
Ingredients
- 10 cup peeled, cored, chopped tomatoes
- 7 1/2 cup peppers, chopped, about 3 pounds
- 5 cup chopped onions
- 1 1/4 cup cider vinegar
- 3 cloves garlic, minced
- 2 tablespoon cilantro, minced
- 3 teaspoon salt
- 1 teaspoon tabasco sauce, optional
Instructions
Combine all ingredients in a large saucepot. Bring mixture to a boil. Reduce heat and simmer 10 minutes. Pour hot into hot jars, leaving 1/4-inch head space. Adjust caps. Process 15 minutes in a boiling water bath. Yield: about 6 pints.
