Black Bean Soup

Ingredients
- 1 C. dried black beans
- 2 Tbs. cooking oil
- 1/2 Tbs. salt
- water
- 1/2 C chopped onion
- 1C chopped celery
- 2 tbs. butter
- 4 c. vegetable broth
- 1/4 teaspoon pepper
- 1/4 teaspoon cayenne
- 1/4 tsp.dry mustard
- 2 tbs. lemon juice
- 1 lemon, sliced
- 1 hard cooked egg, sliced length wise
Instructions
4 - 6 servings. Wash beans and soak over night in oil, salt, and enough water to cover beans completely. Drain and discard liquid. Place beans in pressure cooker. Add remaining ingredients except lemon and egg. Close cover, bring to pressure and cook for 35 min. Let pressure drop on its on accord. Garnish each bowl with slices of lemon and egg.
