Clay Baker Gourmet Beef Stew

Ingredients

  • 2 pound lean stewing beef; cut in 1 1/2" cubes
  • 1 onion, sliced
  • 3 tomatoes, quartered
  • 3 green peppers, chopped
  • 1 1/2 bay leaves
  • pinch of thyme
  • salt and pepper
  • vegetables to taste

Instructions

Soak lid. Mix all ingredients in a bowl, place in clay baker, cover and put into cold oven. Temp 425F, 80 minutes.
