High Pressure Chili

The pressure and the heat are on! If you need pressure cooker recipes for beef, try this High Pressure Chili. Made entirely in your pressure cooker, this easy one pot dinner is spicy and delicious. Serve with a large piece of cornbread.

Ingredients

  • 2 pounds coarsely ground beef
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 1 can (about 8 ounces) tomato sauce
  • 2 cups water
  • 1 tablespoon chili powder
  • 2 cloves garlic, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1 can (about 16 ounces) kidney beans, drained and rinsed

Instructions

  1. In your pressure cooker, brown beef, onion and green pepper over medium heat. Discard excess fat.
     
  2. Stir in tomato sauce, water, chili powder, garlic, cumin, salt, pepper, oregano, and cayenne pepper.  Close cover securely. Place pressure regulator on vent pipe. Cook 5 minutes at 15 pounds pressure. Let pressure drop of its own accord.
     
  3. Before serving, stir in beans. Cook until heated through.

Why do you have to add BEANS to all of the chili recipes? Back in old Texsa they DID NOT add BEANS. When they had beans they would presock them for a day. That is how my grandmother and her friends would do it. Even on trail drives. You should try it. This how I do it and I let chili rest for a day or two to gave great flover.
