Meaty Tomato Soup

Ingredients
- 1 pound lean beef sliced
- 3 cups water
- 1 large onion chopped
- 2 carrot sliced
- 1 1/2 cup cabbage shredded
- 2 1/4 pounds tomato quartered
- 1 bay leaf
- 1 clove garlic
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon sugar
- 1 cup fat-free sour cream, or fat free plain yogurt
- 2 tablespoons corn starch
Instructions
Serving Size: 4. Combine all ingredients except sour cream and cornstarch in pressure cooker. Cook 20 minutes, let pressure drop naturally. Remove bay leaf. Mix sour cream and cornstarch together until smooth. Stir in 1 cup soup. Pour mixture into remaining soup, stirring constantly. Serve over hot cooked rice, if desired.
