Ingredients

  • 6 eggs beaten
  • 1 c grated cheese
  • 1 c crumbled bacon, crumbled sausage or chopped ham
  • 6 small potatoes shredded

Instructions

Coat pressure cooker in oil and preheat without cover. Meanwhile shred potatoes in processor, rinse and squeeze all moisture out, let brown in cooker while making other preperations. Beat eggs, set aside. Break up potatoes and add 1/4 c water, then rest of ingredients. Combine lightly. Cover and just bring to pressure. Serve immediately with toast. Makes 4-6 servings
