Pressure Cooker Lemon Pudding

Ingredients

  • 1/2 cup sugar
  • 2 tblsp flour
  • 1/8 tsp salt
  • 1 tblsp margarine
  • 3 tblsp lemon juice
  • Grated rind of 1 lemon
  • 2 egg yolks beaten
  • 2/3 cup milk
  • 2 egg whites beaten
  • 2 cup water

Instructions

Combine sugar, flour salt and magarine. Addlemon juice, grated rind, egg yolks, and milk. Mix well. Fold in beaten egg whites. Pour into individual custard cups. Cover each cup with aluminum foil. Pour water into cooker. Place cups on rack in cooker. Cover and close securely. Place pressure regulator on vent pipe and cook 10 minutes with pressure regulator rocking slowly. Cool cooker at once.
