Stuffed Beef Heart

Ingredients

  • 1 beef heart, cooked
  • 2 cup dried bread cubes
  • 2 tbsp chopped green pepper
  • 1 tsp salt
  • 3 tbsp chopped onion
  • 2 tbsp melted butter
  • 1/2 tsp celery seed
  • 1/2 cup milk
  • 6 bacon slices

Instructions

Cook heart 45 minutes in 1 1/2 cups water and 1/4 cup vinegar at 15 pounds pressure. Cool normally 5 minutes, then cool under running cold water. Combine all stuffing ingredients except bacon and mix well. Stuff cavity of heart, tie securely with string and cover with bacon strips. Bake uncovered at 325 for 40 minutes. Remove heart, add 1 1/2 cups of cooking liquid to pan drippings, thicken with 2 tbsp flour mixed into 1/3 cup cold water. You can also used boxed stuffing or your favorite recipe.
