Basic Tapioca Pudding

Ingredients

  • 2 3/4 cup milk
  • 3 Tbsp. quick cooking tapioca
  • 1/3 cup sugar
  • dash of salt
  • 1 egg, slightly beaten
  • 1 teaspoon vanilla

Instructions

Combine all ingredients except vanilla in saucepan and allow to sit for 5 minutes to soften tapioca. Set pan over medium heat and bring to full boil, stirring constantly. Set off heat and stir in vanilla. Pudding will be very thin but will thicken as it cools. Allow to cool slightly before pouring into 4 small custard cups or individual servings. May be served warm or cold.
