Italian Noodle Pudding Dessert
Ingredients
- 1 lb pkg of wide egg noodles
- 3 tbs butter or margarine
- 3 cup milk or half and half
- 4 eggs
- 1 cup ricotta cheese
- 1/4 cup sugar
- 1 tsp vanilla
- 1 tsp almond extract
- 1/2 cup candied cherries diced
- 1/2 cup toasted sliced almonds
Instructions
Cook noodles and drain well. Place in a well buttered oblong pan ( 9 x 13 ). Mix eggs, milk, cheese, sugar and flavorings until smooth. Blend in fruits and nuts. Place over noodles and smooth top. Bake 325 F about 45 minutes or until topping is set. Serve warm room temp or cold with a dollop of sweetened whipped cream. Serves 10 to 12.
