Sticky Banana and Honeycomb Pudding
Ingredients
- 1/2 cup cream
- 1/4 cup firmly packed brown sugar
- 60g butter, melted
- 1 medium banana
- 1 cup Self raising flour
- 1/2 tsp ground nutmeg
- 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 cup castor sugar
- 1/2 cup milk
- 30g butter, melted, extra
- 2 50g bars chocolate-coated honeycomb, chopped
Instructions
Grease oven-proof dish (7-cup capacity). Combine cream, butter and brown sugar in prepared oven-proof dish, mix well. Top with sliced banana. Sift dry ingredients into bowl, stir in sugar, combined milk and extra butter, then 3/4 of the honeycomb. Spread mixture over banana in dish. Bake, uncovered, in moderate oven 45 mins. or until firm. Serve dusted with icing sugar, and whipped cream topped with remaining honeycomb.
