Amish Muffin Tin Dessert Popovers

The Amish are known for their heart warming, homemade bread recipes. Amish Muffin Tin Dessert Popovers are a sweet dessert bread made with pecans, cinnamon and nutmeg. Place them in the oven and watch as they puff up to a fluffy pastry-like bread that is a great as an after dinner snack. Once you have one, you'll want to make them every night.

Ingredients

  • 3 ounce cream cheese, softened
  • 1/4 cup dark brown sugar
  • 1/2 teaspoon grated lemon rind
  • 1/2 cup chopped pecans
  • 1/3 cup melted butter
  • 1 1/4 cup milk
  • 3 eggs
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2/3 cup flour
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon nutmeg

Instructions

  1. Beat cream cheese in electric mixer or by hand until creamy. Add sugar and lemon rind. Beat light and fluffy. Remove from mixer; stir in nuts. Spoon into small bowl. Refrigerate.
     
  2. PreHheat oven to 400 degrees F.
     
  3. Brush a muffin tin heavily with melted butter. Heat the tin in oven. Watch so butter does not burn.
     
  4. Put milk, eggs, vanilla and salt into electric mixer. Mix until well mixed.  Slowly add flour, nutmeg and cinnamon, mixing often. Beat until mixed well.
     
  5. Remove cheese-nut mixture from refrigerator.
     
  6. Remove muffin tin from oven.
     
  7. Fill hot muffin cups about 1/2 to 2/3 of the way full with batter.
     
  8. Gently drop about 1 teaspoon of cheese-nut mixture into center of each filled muffin cup.
     
  9. Bake until puffed and golden, 40 to 45 minutes. Serve immediately. Makes about 1 dozen
