Authentic West Texas Cornbread
Take a trip to the South and enjoy a piece of Authentic West Texas Cornbread. Made with extra sharp Cheddar cheese, onion, sour cream and a jalapeno pepper, this dish certainly doesn't skimp on flavor. Everyone needs a good basic cornbread recipe as a go-to dinner side dish, and this easy version is a great way to incorporate some unexpected tastes into a traditional classic.
Ingredients
- 1 cup plain cornmeal
- 1/2 cup plain flour
- 3 teaspoon baking powder
- 1 teaspoon salt
- 1 cup grated extra sharp Cheddar cheese
- 1 (8-ounce) carton sour cream
- 1/4 cup Crisco oil
- 1 medium onion, chopped
- 1 can (10-ounce) whole kernel corn, with liquid
- 2 eggs
- 1 jalapeno pepper, sliced

Preheat oven to 350 degrees F.

Pour 1 Tbsp. oil into a 9-inch iron skillet and place skillet in pre-heated oven.

Mix all dry ingredients together until thoroughly combined.

Add other ingredients (saving a little cheese) and mix well with a spoon.
- Pour mixture into hot skillet. Sprinkle cheese and jalapeno pepper slices on top and bake until light brown (about 25-30 minutes).
