Baked Hush Puppies
Hush puppies are such a yummy treat, yet we often forget how easy they are to make. Make this terrific recipe for baked hush puppies and enjoy their goodness without guilt!

Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/8 teaspoon ground red pepper
- 2 large eggs, lightly beaten
- 3/4 cup milk
- 1/4 cup vegetable oil
- 1/2 cup finely chopped onion
- Vegetable cooking spray
Instructions
- Preheat oven to 425 degrees F.
- Combine cornmeal flour, baking powder, sugar, salt, and red pepper in a large bowl; make a well in the center of mixture. Set dry mixture aside.
- In a separate bowl, combine eggs, milk, oil, and onion, stirring well; add to well in dry mixture, stirring just until dry ingredients are moistened.
- Coat miniature muffin pans with cooking spray.
- Spoon about 1 tablespoon batter into each muffin cup (cups will be about 3/4 full).
- Bake for 15 minutes or until done.
- Remove from pans, and serve immediately.
