Banana Bread with Buttermilk & Meringue

Ingredients
- 1 cup margarine
- 2 1/2 cup sugar
- 1 1/2 tsp. baking soda
- 3 cup sifted flour
- 1 tsp. salt
- 4 egg yolks, beaten
- 6 Tbsp. buttermilk
- 2 tsp. vanilla
- 2 cup mashed ripe bananas (4 to 5)
- 1 cup chopped nuts (optional)
- 4 egg whites, beaten
Instructions
- Cream margarine and sugar.
- Combine flour, salt, and baking soda; add to creamed mixture, alternating with egg yolks and buttermilk.
- Add vanilla, bananas, and nuts (optional). Fold in egg whites.
- Pour into greased loaf pans and bake at 325 degrees for 1 1/2 hours. Makes 2 large or 4 miniature loaves.
