Famer's Hoe Cakes

Ingredients

  • 1 1/2 cup corn meal
  • 1 cup all-purpose flour
  • 1/4 cup oil
  • 1 1/4 cup buttermilk
  • 1/3 cup sugar
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 1 teaspoon baking soda

Instructions

  1. Combine cornmeal, flour, sugar, salt and soda in medium bowl. Add eggs, oil and buttermilk. Stir just until ingredients are moistened.
     
  2. Pour into heavily oiled skillet 1/4 cup of batter for each hoe cake.
     
  3. Fry over medium-high heat 1 or 2 minutes or until golden brown on each side. Use additional oil if necessary.
     
  4. Drain on paper towels. Serve immediately.
