Hush Puppies

Ingredients

  • Vegetable oil
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 2 Tbs. sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 egg
  • Hot pepper sauce, optional

Instructions

Preheat oven to 250 F. Line baking sheet with paper towels. In large deep skillet heat 2" oil over medium heat until hot but not smoking. In large bowl stir together cornmeal, flour, sugar, baking powder and salt. In small bowl beat together buttermilk and egg; stir into cornmeal mixture. Drop by teaspoonfuls into hot oil. Cook in batches until hush puppies are golden on all sides and float to the top, 3-5 minutes. Drain on paper towels. Transfer to towel-lined baking sheet; place in oven to keep warm while cooking remaining hush puppies. Serve with hot pepper sauce, if desired.
