Cracker Barrel Copycat Banana Pudding

Ingredients
- 1 1/2 quart milk
- 1 1/4 cup liquid eggs
- 1/4 teaspoon imitation vanilla extract
- 1 1/8 cup white whole wheat flour
- 1 1/4 cup SPLENDA
- 12 ounces sugar free vanilla wafers
- 1 3/4 bananas, peeled
- 8 ounces Cool Whip Free
Instructions
- Heat milk in pot to 170 degrees F.
- Mix eggs, vanilla extract, flour and sugar in separate container. Add mixture to milk; cook until custard-like, stirring constantly.
- Spread Nilla Wafers on bottom of baking pan. Slice bananas and place over Nilla Wafers. Pour custard over cookies and bananas; cool.
- Spread Cool Whip over top.

This recipe sounds really good. I just love banana pudding, especially with Vanilla Wafers. Has anyone tried making it using regular eggs in place of the liquid eggs? I never buy liquid eggs, but always have a lot of regular eggs in my fridge. I wonder if it would be an equal substitution. I bet this would be really good if you made a pressed pie crust out of the Vanilla Wafers and put the pudding over the top. Kind of like a banana cream pie! I'm drooling just hinking about it. I also think a sprinkle of coconut over the top would be really yummy.
