French Rice Casserole
Ingredients
- 2 pounds zucchini
- 1/2 cup plain white rice
- 1 cup minced onions
- 3 Tbs olive oil
- 2 cloves garlic, crushed
- 2 Tbs flour
- 2 1/2 cups hot milk
- 2/3 cup grated cheese (parmesan, mozzerella or your favorite)
- a well buttered 6 to 8 cup baking dish about 1 1/2" deep
Instructions
Grate zucchini, squeeze dry and saute in half the olive oil until tender. Drop rice in boiling, salted water and cook for 5 minutes then drain and set rice to the side. Use the other half of the oil and saute the onions until very lightly browned, then add cooked zucchini, flour and garlic and stir well. Cook over medium heat for a couple more minutes. Remove from heat. Slowly add hot milk and stir in well. Return to heat and bring to the simmer for a minute or two while stirring, then remove from heat. Add in rice and all but 1/4 cup of cheese and stir. Check for seasoning and then pour into buttered baking dish. Sprinkle remaining cheese on top. Place this still-hot dish in a preheated 425 F oven and bake about 20 to 25 minutes until bubbly and the cheese has browned. You can substitute other vegetables as you wish.
