Green Chile Rice

Ingredients

  • 1 bunch cilantro
  • 2 green chile peppers, seeded
  • 3 cloves garlic, peeled
  • 1 onion
  • 2 cup rice
  • 3 1/2 cup vegetable stock
  • 1 lime

Instructions

Put cilantro, chiles and garlic in blender with a little stock and puree. In saucepan add rice, cilantro puree and the rest of the stock and stir to combine. Cook covered over low heat for 20 minutes. Remove from heat and let stand covered for another 5 minutes. Zest the lime. Squeeze lime over the rice and stir in lime zest. Serve with enchiladas.
