Indian Coconut Rice Pilaf
Ingredients
- 2 c long grain rice
- 2 c coconut milk
- 1 t grated fresh ginger
- 4 T oil
- 1 1/2 t black mustard seed
- 8 dried red chillies
- 1/3 c sesame seeds
- 1 c flaked fresh coconut
- salt
Instructions
Soak rice in water. Boil coconut milk with 1 1/2 cups water and grated fresh ginger. Drain and add the rice, bring to a boil again, cover, turn off heat. In separate pan, in oil fry mustard seeds until they pop. Add red chillies, brown. Add sesame seeds and brown lightly. Pour the flavored oil over rice, salt to taste. Toss in fresh coconut (or substitute unsweetened dried unsweetened that's been soaked).
