Lettuce and Rice
Ingredients
- 4 slices cured bacon, diced
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 3 cup shredded lettuce
- 1 cup cooked rice
- 2 cup canned tomatoes
- salt and pepper, to taste
Instructions
Cook bacon until crisp, drain off excess fat, and add onion and green pepper. Saute' until tender. Add lettuce and cook lightly, until lettuce is wilted. Add rice and tomatoes and cook until heated through. Add seasonings to taste. Serves 4-6, depending upon appetites. This is a fine accompaniment to cold sliced ham. It is even better when served with hot crusty bread.
