    Mexican Style Spanish Rice

    Ingredients

    • 1 lb. pork sausage, broken into chunks
    • 1/2 green pepper, chopped
    • 1 cup long grain rice, uncooked
    • 1 envelope enchilada seasoning
    • 16-oz can stewed tomatoes
    • 2 cups water
    • 2 Tbsp canned chopped green chilies
    • 1 pkg frozen green peas

    Instructions

    serves: 4 - 6. In large skillet, cook sausage for 5 minutes, stirring occasionally. Spoon off all but 2 Tablespoons of the drippings. Add green pepper and rice. Saute for 2 minutes, stirring occasionally. Add enchilada seasoning, stewed tomatoes, water, and green chilies. Heat to boiling. Reduce heat. Add green peas, cover and simmer for about 15 minutes.
