Monterey Rice
Ingredients
- 2 cups dry rice
- 2 cups sour cream
- 2 6-oz cans green chiles
- 10 oz.s Monterey Jack cheese, grated
- Fresh Parmesan cheese, grated
Instructions
Cook the rice. While still hot, add sour cream, chiles, and Monterey Jack cheese. Put into a 2-quart casserole dish. Cover and bake at 375 degrees F. for 25 minutes. Remove cover and sprinkle top with Parmesan cheese. Bake another 5 minutes uncovered.

I am looking for a good side dish to go with a chicken recipe I saw earlier (chicken pillows). I like the sound of this recipe but two cans of green chilies sounds like so much. I am not really familiar with using them, is that a lot? The sour cream and monteray cheese will be sure to please my crowd. I can't wait to try this next week.
