Mushroom and Wild Rice Pilaf
Add some fancy to your side dish with wild rice recipes. This Mushroom and Wild Rice Pilaf is a real winner that goes great with chicken or fish.
Ingredients
- 4 teaspoon butter
- 2 shallots, peeled and chopped
- 2 cup chopped shiitake, oyster or white mushrooms
- 2/3 cup wild rice
- 2 sprigs fresh rosemary or 1/2 teaspoon dried
- 2 cup broth
- Salt to taste
- Pepper to taste
Instructions
Melt butter in saucepan. Add shallots and mushrooms. Saute over medium heat for 5 minutes. Add wild rice, rosemary and broth. Bring to a boil. Reduce heat, cover and simmer about an hour or until rice is tender and liquid absorbed. Season to taste. Makes 4 servings.
