    Old Style Rice Balls

    Ingredients

    • 1/2 pound rice
    • 3 tablespoons olive oil
    • 1 pound ground turkey
    • salt
    • pepper
    • 1/4 cup Parmesan cheese, grated
    • 2 egg, well beaten
    • 1 cup bread crumbs
    • 2 cups peanut oil

    Instructions

    Cook rice in 2 quarts boiling water until grains crush easily between thumb and finger. Drain and cool slightly. While rice is cooking brown turkey in olive oil and season with salt and pepper. Add Parmesan and mix well. Set aside and cool. Place 2 tablespoons of rice in the palm of your hand and make a well. Put 1 heaping tablespoon of the meat mixture into the well. Carefully mold rice around meat into a ball making sure it is completely sealed. Dip balls in beaten egg then into bread crumbs. Deep fry in peanut oil until golden brown on all sides, about 3 minutes. remove from oil and drain on paper towel;. Serve warm.
