Rice Florentine

Ingredients

  • 2 t oil
  • 2 t butter
  • 1 cup minced green onion
  • 1 c minced parsley
  • 1 1/2 c chopped spinach (fresh)
  • Parmesan Cheese

Instructions

Heat oil in pan and stir in all ingredients. Simmer 5 min and add 2 cups minute rice. Cook and stir a few minutes until rice is separated. Add 2 cups chicken stock. Cook 10 min. Add another 1 1/2 cups stock. Add butter and salt to taste. Grate parmesan over top.
