Rice Jardin
Ingredients
- 1 cup chopped onions
- 250 grams (1/2 pound) zucchini sliced thin
- 3 tablespoons butter or margarine
- 1 can corn (1 pound)
- 1 can tomatoes (1 pound)
- 3 cups cooked rice
- 1 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon oregano
Instructions
Saute onions and zucchini in butter till tender. Add remaining ingredients. Cover and simmer for 15 min.

This is a really good side dish. I'm usually not much of a zucchini eater, but the addition of the corn and tomatoes moves it over to the win column for me. My wife and I both love basmati rice and I'm wondering if anyone has used some different types of rice with this? I'd like to give this a try with some wild rice, since I think that would provide a nice additional layer of flavor.
