Simple Delicious Rice Balls
Easy rice recipes never looked so easy and tasty as this awesome dish. Make some Simple Delicious Rice Balls for your next meal, they go well with all sorts of entrees!
Ingredients
- 1/4 cup oil
- 1 onion, minced
- 2 cups short grain rice, cooked
- 2 eggs, beaten
- 2/3 cup Gruyere cheese (or other), grated
- 2 tablespoons flour
- 1 teaspoon curry
- salt and pepper
- 3 tablespoons dry breadcrumbs
Instructions
- In a heavy skillet, heat 1 teaspoon of oil and sautee onion.
- In bowl combine onion with rice, eggs, cheese and seasonning. Mix well.
- With wet hands, shape rice in eight balls (make them very tight). Roll in breadcrumbs.
- Heat the rest of the oil in the skillet and fry rice balls about 15 minutes.

This is a terrific snack idea. I see flour listed as one of the ingredients but it's not mentioned in the instructions. I'm thinking it probably has to be mixed with the other ingredients in step two. It'll be nice to crush the rice in a food processor sometimes to make smaller rice balls or use as a substitute for potatoes in fish cakes.

I'd like to know how much curry to use. The ingredient list just says "1 curry" and I know that's not right! (I guess the easiest thing to do is to start out with 1 tsp and work up from there...)
