Spanish Rice

Ingredients

  • 1/2 cup finely diced onion
  • 1/4 cup finely diced green bell pepper
  • 1/4 cup finely diced celery
  • 2 cloves garlic minced
  • 2 tbsp vegetable oil
  • 1 cup long grain white rice
  • 1 tsp ground cumin
  • 1 1/2 cup Chicken broth
  • 1/2 cup canned tomato sauce or tomato puree

Instructions

Saute the veggies in the oil over medium heat until the onions become translucent, about 5 min. Add the rice and cumin. Cook 5 min. more stirring frequently. Add the broth and the tomato sauce. Bring to a boil, then reduce to a simmer, cover and cook 15 minutes.
