Spanish Rice
Ingredients
- 1 cup uncooked long grain rice
- 2 cups water, brought to simmer
- 2 red peppers, chopped
- 14-ounce can diced tomatoes
- 3 onions sliced very thin
- 2 tablespoons butter
- 1 tablespoon prepared mustard or to taste
Instructions
In a cast iron skillet, fry the uncooked rice, stirring constantly. The trick to this recipe is to get the dry, uncooked grains slightly brown and hard but not burn them. In a separate frying pan, saute the onions in the butter until golden. Combine rice, onions, tomatoes, peppers, and simmering water over medium heat and cook covered for 30 minutes. Add the prepared mustard and stir in. Cook 10 minutes more. We used to serve this over a slice of ham but now serve it over a slice of turkey ham.
