Super Easy Asian Rice Porridge
Ingredients
- 1 cup long-grain rice
- 10 cup water
- 4 tbsp. oil
- 1 lb. bok choy (Chinese green), diced
- 3 teaspoon salt
- 6 dried black mushrooms soaked in boiling water 20 minutes, diced
Instructions
Serves 4-6.. Wash rice thoroughly. Pour water into pot. Add rice. Bring to boil. Meanwhile, heat oil in wok to 400 degrees. Stir-fry bok choy 1 minute. Add 1 teaspoon salt. Pour bok choy and mushrooms into rice. Add 2 tsp. salt. Cover and simmer 2 hours. Notes: May be prepared in advance. May be frozen. Reheat before serving. You can add soybeans, ginkgo nuts, lotus seeds, sweet potatoes, carrots, peas, zucchini, string beans, or any other vegetable that pleases you. Can be accompanied by eggs, pickled vegetables, salted peanuts, fish, or ham.
