Vegetable Pilaf
Ingredients
- 5 T. butter
- 2 onions, chopped
- 2 bay leaves, crushed
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1 teaspoon grated ginger
- 1/2 c diced potato
- 1/2 c cauliflower
- 1/2 c peas
- 1/2 c sliced carrots
- 1/2 c green beans
- 1/2 c zucchini
- 1/2 c chopped bell pepper
- 2 1/2 c. white rice
- 1/2 teaspoon saffron
- 5 c. water
- 1/2 c. cashews
- 1/2 c. raisins
Instructions
Saute onion and bay leaves in butter until onion begins to color. Add cloves, cinnamon and ginger, stir for a minute. Add prepared vegetables, rice and saffron. Toss over medium heat for 5 minutes, then add water and 2 tsp. salt. Bring to boil, turn heat to low, cover tightly and cook for 25-30 minutes. All water should be absorbed. Add cashews and raisins and gently mix everything. Spoon mixture into well-oiled casserole dish and bake at 350F for about 20 minutes.
