Zesty Pepper Rice

If you are looking for easy rice recipes, this Zesty Pepper Rice makes a great weeknight side dish to your entree. The mix of bell pepper and onions pairs perfectly with beef and chicken dishes.

Ingredients

  • 2 cup white rice
  • 1 green bell pepper, diced
  • 2 green onions, chopped
  • 4 ounce beef steak
  • 1 teaspoon salt
  • black pepper coarsely ground, to taste

Instructions

  1. Pan fry stake on high heat to char. Dice and set aside.
     
  2. Boil 3 cups of water with salt, add rice, stir, turn heat setting to simmer for 25 minutes then take the pot off the stove for 5 minutes.
     
  3. Transfer rice into a large bowl and fluff the rice with a fork.
     
  4. Combine the remaining ingredients to the rice, cover for 5 minutes to allow the raw vegetables to slightly cook. Stir again before serving.
