    Almond Fruit Salad

    This unique Asian-inspired fruit salad is packed with fresh fruit, crunchy almonds and rice. This is a great light summer side dish for chicken or fish.

    Notes

    Prepared poppy seed dressing may be substituted for dressing.

    Ingredients

    • 2 cups cooked white or brown rice, cooled to room temperature
    • 1 orange, peeled and sliced
    • 1/2 cup red grapes, halved
    • 1 kiwi fruit, sliced
    • 1/3 cup slivered almonds, toasted
    • 2 tablespoons orange juice
    • 1 tablespoon soy sauce
    • 2 teaspoons vegetable oil
    • 1/4 teaspoon minced fresh ginger

    Instructions

    1. Combine rice, orange, grapes, kiwi fruit, and almonds in large bowl.
       
    2. Blend orange juice, soy sauce, oil and ginger in small bowl; pour over rice mixture and toss lightly.
