Almond Fruit Salad
This unique Asian-inspired fruit salad is packed with fresh fruit, crunchy almonds and rice. This is a great light summer side dish for chicken or fish.
Notes
Prepared poppy seed dressing may be substituted for dressing.
Ingredients
- 2 cups cooked white or brown rice, cooled to room temperature
- 1 orange, peeled and sliced
- 1/2 cup red grapes, halved
- 1 kiwi fruit, sliced
- 1/3 cup slivered almonds, toasted
- 2 tablespoons orange juice
- 1 tablespoon soy sauce
- 2 teaspoons vegetable oil
- 1/4 teaspoon minced fresh ginger
Instructions
- Combine rice, orange, grapes, kiwi fruit, and almonds in large bowl.
- Blend orange juice, soy sauce, oil and ginger in small bowl; pour over rice mixture and toss lightly.
