California Avocado Pasta Salad

Fresh lemon juice, sesame oil and avocado give this pasta salad it's refreshing flavor. Easy to make and perfect for a snack or dinner, this homemade pasta recipe is served cold with a hint of garlic. Taste the sunshine and feel refreshed with our California Avocado Pasta Salad.

Ingredients

  • 1/2 pound vermicelli or angel hair pasta
  • 1 ripe avocado
  • 2 tablespoon sesame oil
  • 1/4 cup lemon or lime juice (or a combination)
  • 1 tablespoon sesame seeds
  • 1/4 teaspoon red pepper flakes (or to taste)
  • pinch salt
  • 2 cloves garlic, crushed

Instructions

  1. Cook pasta, drain, and rinse in cold water to chill.
     
  2. While pasta is cooking, peel avocado and cut into approximately 1-inch pieces.
     
  3. Mix other ingredients in a small cup and pour over avocado. Add cold, drained pasta and mix thoroughly.
