Church Social Cornbread Salad
This one's definitely on our list of best salad recipes. Church Social Cornbread Salad is a simple recipe for cornbread salad that's perfect for a church supper or family gathering. Baked cornbread is crumbled and mixed with a variety of vegetables and bacon to create this sweet and savory salad. Celery, bell peppers, tomato, corn and more are packed into this salad and held together with a dressing of mayonnaise. Pretty much any easy salad with bacon gets our vote.

Ingredients
- 2 packages corn bread mix, baked and crumbled
- 1 cup celery,chopped
- 1 cup bell pepper, chopped
- 3 tomatoes, chopped
- 3 green onions, chopped
- 1 can whole kernel corn, drained
- 10 slices bacon, cooked crisp and broken in pieces
- 1 1/2 cup mayonnaise
Instructions

Mix all ingredients together and chill before serving.

I have been making this salad for many years and it is a keeper. It needs the mayonnaise and not vinaigrette which will make the cornbread soggy. I also make sure to seed the tomatoes, so that the cornbread doesn't absorb the moisture.

This sounded amazing until I got to the mayonnaise. ICK!!!! I will still try this but use some type of vinaigrette. Instead of the canned corn I'll use a few ears of grilled corn. This would be perfect to serve on a hot summer day.
