Cranberry Pineapple Salad
Fresh cranberries and sweet pineapple come together in a delightful and unique fruit salad. This is a great side salad for a summer party, but it pairs well with any meal.
Notes
You need less sugar if you are letting the salad sit for a while to chill and more if you are serving within several hours.
Ingredients
- 5 packages fresh cranberries
- 3 20-ounce cans chunk pineapple with juice
- 2 cup walnuts
- Sugar, to taste (approximately 1-2 cups)
Instructions
- In a blender or food processor, cut cranberries into coarse pieces. Process pineapple and walnuts into coarse pieces as well.
- Mix fruit, pineapple juice and nuts into a bowl. Stir in 1 cup sugar and gradually add more to taste.
