Crunchy Pea Salad

Ingredients

  • 1 pkg (10 oz.) frozen baby peas, thawed (can be doubled)
  • 1 cup diced celery
  • 1 cup chopped cauliflower (finely chopped carrot substites well)
  • 1/4 cup diced green onion (I have used 2 slices of red onion, chopped)
  • 1 cup chopped cashews, salted (I leave them whole)
  • 1/2 cup sour cream
  • 1/4-1/2 cup ranch dressing
  • crisp cooked crumbled bacon for garnish

Instructions

Combine all ingredients. Chill. Garnish before serving. Note: I go very easy on the dressing (I don't care for salads swimming in dressing) and rather than bacon I garnish with cashews.
