English Pea Salad
Ingredients
- 1 1/2 pound fresh English peas (1 1/2 cups shelled)
- 1 cup (4 ounces) sharp Cheddar cheese, cut into cubes
- 1/2 cup chopped onion
- 2 hard-cooked eggs, chopped
- 1 (4-ounce) jar diced pimiento, drained
- 6 small gherkins, chopped
- 3 tablespoons mayonaise
- 1/4 teaspoon prepared mustard
- 1/8 teaspoon pepper
- tomato slices
Instructions
Shell and wash peas; cover with water in a medium saucepan. Bring to a boil; cover, reduce heat, and simmer 8 to 12 minutes or until tender. Drain. Combine peas and next 8 ingredients; mix well. Chill. Serve with tomato slices. Yield: 6 servings.

This is a crowd pleaser I make every year. I use dill sweet relish together and no Pimiento. Mayo instead of mustard! The kids don't like it! It's one everyone asks for at Thanksgiving and Christmas. But when we have family gatherings (BBQ's etc!) It's in demand!
